Thaw Strawberry Rhubarb mix (Frozen fruit in the package can be thawed in the refrigerator, under running water, or in a microwave oven, at 20-second intervals, if thawed immediately before use.)
Grease a 9" x 13" baking pan. Preheat oven to 350° F.
Mix oats, flour and coconut oil until a crumb like texture forms. Press mixture firmly into greased pan.
Mix thawed Strawberry Rhubarb mix with honey and lemon juice
Press oat mixture into the bottom of the pan and top with strawberry rhubarb mixture.
Bake for 25-30 minutes. Allow to cool slightly in pan, if serving immediately.
